Madrid Fusión Dreams 2026 #spainfoodtechnation will debate how we will eat and cook in the coming decades: from the evolution of taste and its role in our history as a species to the possibility of eating without cooking and the rise of single-person restaurants. We will talk about ultra-processed foods, fake food, and gastronomic bubbles, but also about the power of ancestral traditions, biodynamics, and animal origin and genetics as guarantors of quality and traceability. There will be space for culinary medicine, high-performance sports nutrition, alternative proteins after the plant-based bubble, the impact of climate change on gastronomy, the role of human capital and innovative Spanish ecosystems, as well as flavor workshops and a key debate: who will take over Spanish haute cuisine?
