Regenerative cooking: recipes that heal the landscape

This talk invites us to reconsider cooking as a means of ecological, social and cultural transformation.
Chefs Vicent Guimerà and João Rodrigues will share their experiences of regenerative cooking, an approach that goes beyond sustainability by proposing an active relationship between gastronomy, territory, and community.
Through their culinary practices, they demonstrate how each recipe can contribute to regenerating the landscape, supporting local producers, reviving traditional varieties and knowledge, and fostering connections between individuals and their environment. It is a reflection on the power of cooking to heal not only bodies, but ecosystems too.
